Sesame Pork Salad

Ingredients:


1 tablespoons sesame seed toasted

8 medium green onions sliced

4 cups Chinese (napa) cabbage shredded

1 medium bell pepper cut into strips

1 pound pork tenderloin cut into 1/4-inch slices

1/2 teaspoon salt

1 tablespoons gingerroot finely chopped

1 medium sweet potatoe peeled and thinly sliced

---Sesame Dressing---
 

Preparation / Directions:


1. Prepare Sesame Dressing. Spray 10-inch nonstick skillet with cooking spray. Add sweet potato, half of the gingerroot, 1/4 teaspoon of the salt and 2 tablespoons of the dressing. Cover and cook over medium heat 8 to 10 minutes, stirring occasionally, until sweet potato is tender. Remove from skillet. 2. Add pork, remaining gingerroot and salt to skillet. Cook 4 to 6 minutes, stirring occasionally, until pork is slightly pink. Arrange pork, sweet potato and bell pepper on cabbage on 4 plates. Sprinkle with onions and sesame seed. Serve with remaining dressing.
