Spinach Salad With Mandarin Orange-Balsamic Dressing

Ingredients:


8 medium mandarin orange slices -- reserved from salad

1/4 cup light olive oil

1 tablespoon plus 1 teaspoon sugar

1/2 teaspoon salt -- or to taste

2 tablespoons balsamic vinegar

2 dashes tabasco sauce

10 ounces washed and trimmed spinach -- (baby leaves preferred)

1/4 cup toasted sunflower seeds or chopped pecans

1 can mandarin orange slices -- (11 ounces) drained (reserve 8 slices for dressing)

1/2 medium red onion -- thinly sliced
 

Preparation / Directions:


To make dressing, in food processor with metal knife or blender, puree oranges. Add oil, sugar, salt, vinegar and hot pepper sauce and process until pureed. (Dressing may be refrigerated up to 4 days.) In a medium bowl, toss spinach, sunflower seeds or pecans, oranges and onion slices with dressing. Serve immediately. Prep Time: 10 minutes Cook Time: 0 minutes Makes: servings Now that spinach leaves are available cleaned, prepped and ready to dress, this refreshingly light salad can be made in a breeze. Choose the youngest, smallest leaves because they will be the most tender.
