Red Pepper Vinaigrette

Ingredients:


1/4 Cup olive oil

1/2 Small onion -- minced

1 clove garlic -- minced

1 medium red bell pepper -- seeded and minced

2 Tablespoons red wine vinegar

1 Teaspoon coarse salt

1/2 Teaspoon ground black pepper
 

Preparation / Directions:


Heat olive oil in a small saucepan over moderate heat. Add onion and saute until soft, about 10 minutes. Add garlic and bell pepper and saute another 2 minutes. Add vinegar, salt and pepper and heat through. Serve over stuffed cabbage.
