Thai Roasting Rub

Ingredients:


1 teaspoon ground coriander

1 teaspoon mustard seed

1 teaspoon sweet paprika

2 whole clove

2 teaspoons fresh ginger

4 cloves garlic

1 teaspoon lemon zest

2 teaspoons dark brown sugar

1 teaspoon green peppercorn

2 teaspoons toasted sesame seeds
 

Preparation / Directions:


1. place ground coriander, mustard seed, sweet paprika, cloves, fresh ginger, garlic, lemon zest, dark brown sugar, green peppercorns and sesame seeds in a mortar and pestle. 2. pound into a paste. 3. press thai roasting rub on meats prior to cooking for great flavor. note: you may also use food processor to make paste.
