No-Fuss Risotto

Ingredients:


2 1/2 cups chicken broth

4 tablespoons wish-bone blended italian dressing

1/2 cup chopped onions

1 cup uncooked arborio rice

1/3 cup grated parmesan cheese
 

Preparation / Directions:


MICROWAVE DIRECTIONS: In 4-cup glass measure, microwave chicken broth at HIGH (Full Power) 6 minutes or until boiling; set aside. In 2-quart microwave-safe casserole, microwave 3 tablespoons blended Italian dressing with onions, uncovered, 3 minutes or until onions are tender. Stir in uncooked rice, coating well; stir in hot chicken broth. Microwave covered 6 minutes or until boiling, then microwave covered at MEDIUM (50% Power) 12 minutes or until rice is tender. Stir in remaining 1 tablespoon dressing and cheese. Let stand 2 minutes, then serve immediately. Garnish, if desired, with chopped parsley. Makes about 4 servings. *Substitution: Use 1 cup uncooked regular rice. CONVENTIONAL DIRECTIONS: Add 2-1/4 cups water. In large saucepan, bring chicken broth and 2-1/4 cups water to a boil, then simmer. Meanwhile, in large skillet, heat 3 tablespoons blended Italian dressing with onions and cook over medium heat, stirring occasionally, 3 minutes or until onions are tender. Stir in uncooked rice, coating well; cook 2 minutes, stirring frequently. Add a ladleful of broth mixture, stirring rice constantly until broth is absorbed. Repeat, stirring constantly, until rice is tender, about 30 minutes. Stir in remaining 1 tablespoon dressing and cheese. Serve and garnish as above. Also terrific with Wish-Bone Italian or Herbal Italian Dressing.
