Mexican Chicken and Rice

Ingredients:


4 pieces boneless chicken breasts, cut into small pieces

1 cup chunky salsa or picante

2 cups uncooked minute rice

1 cup chicken broth
 

Preparation / Directions:


Bring chicken, salsa and broth to a boil. Cover and simmer for 20 minutes. Stir in rice. Sprinkle with cheese. cook on low for 5 additional minutes (If you're like me and don't like chunky stuff, just whiz the salsa in the blender. It's just as good that way
