Ingredients:


2 cups cooked rice

2 whole eggs

1/4 teaspoon salt

1 tablespoon sugar

2 tablespoons shortening
 

Preparation / Directions:


Beat egg well into rice, add salt and sugar. Melt considerable shortening in a heavy frying pan and drop the rice mixture by spoonfuls in the hot shortening. When brown on one side, turn and brown on the other side. Serve with butter and sugar or syrup with a green salad and crisp bacon.
