Picadillo Rice

Ingredients:


3/4 pound lean ground beef

1 small onion -- chopped

1/2 cup chopped green bell pepper

16 ounces diced tomatoes

1 cup water

2 tablespoons raisins

2 tablespoons pimiento-stuffed olives -- chopped

1 teaspoon chile powder

1 teaspoon ground cumin

1/4 teaspoon salt

1 dash ground cinnamon

1/2 cup uncooked long-grain rice
 

Preparation / Directions:


Cook first 3 ingredients in a large skillet over medium heat, stirring until beef crumbles and is no longer pink. Drain well. Stir in tomatoes and next 7 ingredients. Bring to a boil; stir in rice. Cover, reduce heat, and simmer 20 minutes or until rice is tender.
