Black Beans and Rice

Ingredients:


1 Large Green Pepper -- chopped

1 Large Onion -- chopped

8 Cloves garlic chopped

3 tablespoons Olive oil

2 Cans Black Beans

1/2 teaspoon Oregano

1 teaspoon Cumin

3 tablespoons Vinegar

3 medium Pimentos -- minced
 

Preparation / Directions:


Sauté pepper, onion and garlic until soft. Add all other ingredients. Cover and simmer until heated through. To thicken...mash two tablespoons beans and re-add to mix. Serve over steamed white rice. REC: Jamaican Sorrel Posted by Pat (Gail's) In a large container place 1 pound dried sorrel (hibiscus flowers). Add 2 ounces of grated green ginger and 6 pints of boiling water. Cover and leave overnight. Strain through muslin or a fine sieve. Add rum and sugar to taste. Serve with lots of ice. I use white rum.
