Anasazi Beans and Rice

Ingredients:


1 cup Anasazi beans

4 cups water

1 medium bay leaf

1 cup brown rice

1 clove garlic -- chopped coarsely

1 medium jalapeno pepper -- chopped

1 tablespoon soy sauce
 

Preparation / Directions:


Soak the beans in the water overnight. If you're short on time, bring the beans and water to a boil and simmer for 1 minute. Cover and set aside to soak for 1 hour. After the beans have plumped up, drain off the water, add 3 cups fresh water and the bay leaf and bring to a boil for 10 minutes. Add the brown rice, garlic, jalapeno pepper, and soy sauce to the boiling beans. Cover, lower the heat to a simmer, and cook gently for 40 minute
