Spanish Onion Relish

2 teaspoons olive oil
7 cups spanish onion
1/2 cup cabernet sauvignon wine
1/2 teaspoon fresh thyme
2 teaspoons honey
1 teaspoon red wine vinegar
1/3 cup golden raisins
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
2 teaspoons mustard seed

Preparation / Directions:

heat olive oil in a saucepan, over a moderate flame add onions and saute for 8 minutes, until they begin to color add wine, thyme, honey, and vinegar heat and stir until liquid has reduced by about half add raisins and simmer until thickened to a syrup remove from heat season to taste with salt and pepper stir in mustard seeds cover and chill indefinitely serve warm, slightly chilled, or at room temperature
