Hamburger Relish

1 large ripe tomato -- cored, seeded, and chopped fine
2 tablespoons sweet pickles -- minced
2 tablespoons yellow onion -- minced
2 tablespoons sweet red pepper -- minced
1 clove garlic
1 tablespoons cider vinegar
1 teaspoon sugar
1/2 teaspoon celery seeds
1/2 teaspoon dijon mustard -- or spicy brown mustard

Preparation / Directions:

Place all the ingredients in a medium-size glass bowl and mix well. Cover and let stand at room temperature at least 30 minutes before serving. Or chill in the refrigerator overnight. Stir well and serve on hamburgers or as an accompaniment to meats. Store tightly covered in the refrigerator for up to 1 week. Makes about 1 1/4 cups.
