Cranberry Fig Relish

Ingredients:


3/4 pound cranberries -- (3 cups)

1 cup finely chopped dried figs

1 cup chopped onion

1/4 cup packed brown sugar

1 tablespoon grated orange rind

1/4 teaspoon pepper

1/2 cup water

1/2 cup red wine vinegar

1/4 cup maple syrup
 

Preparation / Directions:


In heavy saucepan, combine all ingredients. Bring to a boil. Reduce heat and simmer, uncovered, for about 50 minutes or until thickened, stirring frequently. Remove from heat; let cool. Source: The Vancouver Sun Oct 5/94
