Mock Ravioli

Ingredients:


2 packages frozen chopped spinach (10 ounce)

2 cups sliced fresh mushrooms

28 ounces canned tomatoes mashed

3 cups chopped onion

1 teaspoon parsley flakes

1 teaspoon ground rosemary

1 teaspoon thyme

1 teaspoon oregano

1 teaspoon granulated sugar

1 pound lean ground beef

1/2 teaspoon salt

1/4 teaspoon pepper

1/4 teaspoon garlic powder

9 pieces lasagna noodles

4 quarts boiling water

1 cup grated cheddar cheese
 

Preparation / Directions:


Combine first 9 ingredients in large saucepan. Bring to a boil. Simmer about 30 minutes, stirring occasionally. Spray frying pan with nonstick cooking spray. Add ground beef. Brown well, breaking up chunks. Add salt, pepper and garlic powder. Stir into spinach mixture. In large uncovered Dutch Oven, cook noodles in boiling water until tender but firm, about 14 to 16 minutes. Drain. Rinse with cold water. Drain. Line bottom of 9x13 inch pan with 3 long noodles. Spread 1/3 meat mixture over top. Repeat twice. Bake, uncovered, in 350~F oven for about 20 minutes until hot. Sprinkle with cheese. Bake for 5 minutes more. Cut into 12 pieces.
