Seafood Quiche

Ingredients:


1 Whole pie shell -- (9 inch) baked

1 Cup half and half

3 large eggs

1 Teaspoon lemon juice

1 tablespoons parsley -- snipped

2 Cups shredded Jack cheese

6 Ounces Cooked Shrimp Or Lobster -- Diced

1 Cup crushed tortilla chips

1 dash hot sauce
 

Preparation / Directions:


In a small bowl combine all ingredients except tortilla chips. Blend well. Pour into backed pie shell. Sprinkle tortilla chips over top. Place pie dish on an inverted saucer in microwave. Microwave at medium (50%) until center is slightly set, 17 to 18 minutes Let stand 5 minutes. Makes 6 servings.
