Persimmon Pudding

Ingredients:


4 cups persimmon pulp

2 1/2 cups sugar

3 cups plain flour

1 teaspoon baking powder

1/4 teaspoon soda

1 teaspoon salt

2 large eggs, beaten

3/4 stick butter melted

1/4 teaspoon ground cloves

1/4 teaspoon ground cinnamon

1 cup buttermilk

1 teaspoon vanilla flavoring
 

Preparation / Directions:


Melt butter in baking pan, 9x13x2 and a 3x6. Sift all dry ingredients together, mix well. Stir in persimmon pulp, add eggs, mix, then milk, add butter last and mix well. Bake about 1 hour and 10 minutes, in preheated oven at 325 degrees. (To get pulp from seeds, wash persimmons, place in pan large enough to cover with warm water, let stand about 10 minutes. Drain off 3/4 of the water, mash persimmons good. Use a potato ricer to separate pulp from seeds and peel).
