Mocha Pudding

Ingredients:


2 cups milk

1/2 teaspoon salt

1/3 cup cream of rice

2 ounces unsweetened chocolate -- 1oz size, melted

1 cup dark brown sugar

1 teaspoon instant coffee

1/2 teaspoon vanilla
 

Preparation / Directions:


Combine milk and salt; scald. Slowly add cream of rice and cook, stirriing constantly, for 1 minute. Remove from heat, cover and let stand 4 minutes. Stir in melted chocolate, sugar, coffee and vanilla. Pour into individual serving dishes or a 1 quart serving dish. Chill. If desired, serve with lightly whipped cream. Makes 6 to 8 servings.
