Mango Tapioca

Ingredients:


3 cups mangoes -- sliced

1/4 cup light brown sugar -- packed

1/2 teaspoon cinnamon

2 cups water

1/3 cup quick-cooking tapioca

1/8 teaspoon salt

1/4 cup sugar

1/4 cup whipped cream -- (optional)
 

Preparation / Directions:


1. Spread peeled, sliced mangoes in baking dish; sprinkle with brown sugar and cinnamon. 2. Bake in preheated 350 F. oven 15 minutes. 3. Meanwhile, boil water; add tapioca, salt and sugar. Cook, stirring, over moderate heat until tapioca is clear, 5 to 10 minutes. 4. Pour over mangoes and return baking dish to 350 F. oven 1/2 hour longer. 5. Serve warm or cold with whipped cream, if desired.
