Gateau De Riz Au Caramel (Or Rice Pudding)

Ingredients:


3/4 Cup uncooked short rice

3 Cup milk

1/2 Cup sugar

2 large eggs

3 tablespoons sugar (for the caramel)

1 tablespoons vanilla extract

1 teaspoons cognac or rum or Grand-Marnier

1/4 Cup raisins
 

Preparation / Directions:


Wash rice, cook 2 minutes in boiling water. - Put the drained rice in boiling milk with vanilla. Cook until rice absorbs all the milk, about 30 minutes (or more if needed!) Put sugar in a pan with a little bit of water, sugar must be wet, put in microwave until sugar become caramel 5 minutes (or more if needed!) Beat eggs, sugar and cognac. Add rice and stir constantly, add raisins. Put the batter in the caramelized pan, bake 1 hour at 350o in "Bain-Marie" (double-boiler). When ready, put a plate on the top and turn upside down.
