Potato Soup

Ingredients:


4 cups carrot -- grated

2 cups celery -- chopped

3/4 cup onion -- chopped

1 teaspoon salt

1/2 cup butter

7 cups whole milk -- (maybe more)

4 cups potatoes -- diced

1 dash white pepper

4 pinches nutmeg
 

Preparation / Directions:


Saute celery and onion in butter until transparent. Combine all ingredients, simmer add a pinch of lemon peel. Put into blender and whizzed in batches until very smooth. Serve hot with a pinch of nutmeg on the top of each bowl.
