Mexican Potatoes

Ingredients:


1 pound potatoes -- mashed, coarsely (4 large)

1/4 cup onion -- diced

1 cup tomatoes -- diced

1/2 teaspoon fresh ground black pepper -- to taste

1/2 teaspoon hot chili pepper -- to taste (1/2 to 1)

1 teaspoon salt to taste

1 clove garlic -- pressed or minced
 

Preparation / Directions:


Fry all ingredients, except potatoes, together for 5 minutes or until they are clear and tender. You may add oil or butter to your taste. Add potatoes, fry until heated through. Garnish with shredded cheese.
