Canned Sweet Potatoes Or Yams (Microwaved) With Variations

Ingredients:


23 ounces whole sweet potatoes in syrup -- or yams

3 cups bowl -- up to 4
 

Preparation / Directions:


Drain off all but about 1/4 cup of syrup from can. In proper size bowl, combine sweet potatoes and remaining liquid. Cover with vented plastic wrap. Microwavea at full power (High) for time listed below, or until heated through, stirring once. Cooking times for 3-4 servings: Cooking time at High: 4 1/2 to 5 1/2 minutes Cooking times for 1-2 servings: Cooking time at High: 3 to 4 minutes Serving Ideas: + Toss hot sweet potatoes with peach jam, drained canned sliced peaches and a little lemon juice. Top with chopped cashews. + Drizzle hot sweet potatoes with maple syrup, then sprinkle with nutmeg or allspice. + Fold cooked whole kernel corn, sliced ripe olives, chopped canned green chilies and cherry tomatoes into cubed potatoes. Toss with vinegar and oil dressing seasoned with taco seasoning mix. Microwave until heated through + Marinate hot cooked cubed potatoes in French dressing. Toss with zucchini chunks, red onion rings, radish slices and herbe croutons just before serving. + Stir crisp-cooked, crumbled bacon, chopped celery, sliced green olives and sliced green onion into cubed potatoes. Microwave until heated through. Top with shredded Cheddar cheese or sour cream.
