Middendorf's "Party Potato Salad"

Always the best dish of the party. Mayonaise haters can't resit it either! Key is to add vinegar mixutre to potatoes while hot so they absorb. Hellmann's brand Mayonaise is essential.
 

Ingredients:


5 pounds regular sized Idaho potatoes

4 medium celery stalks

2 medium Onions

30 ounces Hellmanns Mayonaise

1/2 cup Heinz apple cider vinegar

1/8 cup water

2 tablespoons salt

1 tablespoon sugar

1/2 teaspoon paprika
 

Preparation / Directions:


After potaoes are peeled and eyed, cut into 6-8 pieces per potato, rinse and boil until fork can enter with ease. Separately, dice celery and onions. In a cup, prepare a mixture of the vinegar, water, salt and sugar, stirring well to dissolve. Drain boiling potatoes and immediately add 1/2 of the vinegar mixture, gently folding the hot potatoes around for 2 min. Add the chopped vegatables and rest of vinegar mixutre folding again for 4 min. Lastly fold in the mayonaise for 5 min. Chill 4-6 hrs. Sprinkle paprika before serving. Enjoy!
