Ginger's Potato Salad For A Crowd

Ingredients:


6 pounds Bag of Potatoes - Peeled

12 large eggs - Boiled

2 medium Onions - Diced

1/2 Jar Sweet Pickle Relish

1/2 Jar Mayo

2 tablespoons Mustard

1 Jar Pimento

2 tablespoons Sugar-Optional
 

Preparation / Directions:


Boil Whole Potatoes then cut into bite size chunks, into a very large bowl it goes. ..Boil Eggs ( add vinegar to water for easier peeling ) Peel and chop up eggs, add to potatoes...Add Sweet Pickle Relish ( some prefer chopped Pickles )...Mustard and pimento goes in next...Add Mayo and Sugar ( remember sugar and Mayo make it gooey so put enough in but not to much )...Mix, Cover and Refridgerate...Keeps well for about 3-4 Days, the 2nd Day is the best !
