Potato Salad - Brenda

Ingredients:


3 pounds potatoes -- peeled, boiled, and cubed

6 large eggs -- (boiled 15 minutes)

1 medium onion chopped

2 tablespoons minced garlic

1/4 cup dry parsley

1 tablespoon salt

1 tablespoon pepper

1 cup chopped celery

1 pound bacon fried and crumble

1/4 cup yellow mustard

1 cup mayonnaise -- up to 1-1/2
 

Preparation / Directions:


Let potatoes cool, and place in a large bowl. Peel eggs and add to bowl with potatoes. Add onion, garlic, parsley, salt, pepper, celery and bacon. mix lightly. Add mustard and mayonnaise, and mix well. (Additional mayonnaise can be added to taste).
