Creamy Ranch Potato Salad

Ingredients:


1 cup wish-bone ranch or lite ranch dressing -- (8 oz.)

1/2 cup sliced green onions

2 tablespoons snipped fresh dill*

1 teaspoon dijon-style mustard

2 large hard-cooked eggs -- finely chopped

1/2 teaspoon salt

1/4 teaspoon pepper

3 pounds red bliss or new potatoes -- cooked and cut into large chunks
 

Preparation / Directions:


In large salad bowl, thoroughly combine all ingredients except potatoes. Toss with warm potatoes; cover and chill. Makes about 10 side-dish servings. *Substitution: Use 1 teaspoon dried dill weed.
