Preparation / Directions:Simmer potatoes in lightly salted water for 15-20 minutes, until tender drain, rinse, drain well, and set aside to cool combine ranch dressing, chiles, cilantro, lemon zest, salt, and pepper combine potatoes, jicama, olives, and scallions pour dressing mixture over potato mixture-toss to mix well cover and chill for 2-24 hours add tomatoes-toss lightly to mix slice avocado and sprinkle with lemon juice arrange on top of salad as a garnish serve chilled
