Preparation / Directions:
Preheat oven to 350 degrees. Mix salt and pepper in a cup. Rub mix on all sides of beef. Place beef in a heavy pan uncovered. Add 1/2 cup water to bottom of pan. Cook in a 350 degree oven for about 1-1/2 hours. After the first hour, add 1/2 cup water to bottom of pan. When done, the inside center portion of the meat should be medium rare. If necessary cook longer to desired point. Place roast on hot serving platter. Reserve juices in the pan. GRAVY: Add water, salt, and pepper to juice in pan. Scrape bottom of pan with a spatula. Pour gravy into a saucepan. Heat for a few minutes over a medium flame. To serve: Slice hot Roast Beef into thin slices and pour hot gravy on top. Makes 6 servings.
