Roast Pork Tenderloin

Ingredients:


1 medium pork tenderloin

1 teaspoon salt and black pepper

2 pieces bay leaves

1/2 cup pitted prunes

1/2 cup apples slices

1/2 cup sherry

1 medium purple onion

3 cloves garlic

1/2 cup dry white wine

4 small shallots

1/2 pound button mushrooms

1 bunch parsley sprigs
 

Preparation / Directions:


Preheat oven to 425. Rub pork with salt and pepper. Place meat in foil lined baking pan. Sprinkle 4-5 bay leaves on top of pork. On top of, and around meat place prunes, apples, onion, garlic, shallots and mushrooms. Drizzle sherry and white wine over all. Roast for 5 minutes uncovered. Remove from oven. Cover with foil and return to oven to cook about 25 minutes, or in microwave for about 10-12 minutes. In microwave: approximately 13-15 minutes. (internal temp of meat should be about 170 degrees.) Let rest 5 minutes before cutting. To serve slice meat and serve with fruit and vegetables. Approximately 13-15 minutes.
