Pork Chops Nišoise

2 teaspoons olive oil
4 Chops lean pork chops 3 ounce
2 3/4 large tomatoes -- chopped
2 cloves garlic -- minced
3/4 large green bell pepper -- chopped
3/4 teaspoon dried basil
1/3 cup black olives
1 1/3 cups cooked rice -- hot

Preparation / Directions:

In a large skillet, heat oil over medium heat. Add pork chops and lightly brown on both sides. Add the tomatoes, garlic, pepper and basil; cover. Simmer 25-30 minutes, turning pork chops once. Add the olives and continue to simmer over low heat 7-10 minutes. Arrange rice on a serving platter, place pork chops over rice, spoon sauce over the top and serve. NOTES : Prep: 10 min, Cook: 45 min.
