Daeji-Kalbi - Spicy Pork Ribs

5 pounds pork ribs
4 ounces gingerroot -- sliced
3 cups water
3 tablespoons garlic -- minced
1 1/2 cups soy sauce
3 tablespoons sesame oil
4 tablespoons brown sugar
3 tablespoons red pepper flakes

Preparation / Directions:

Cut grooves in the pork meat and cut off excess fat. Boil the pork ribs in water to get rid of the pork odor before stewing. Discard the water and wash the ribs through warm water. In a heavy pot, bring the pork ribs to a boil with the ginger and water. When it boils, add the garlic, soy sauce, sesame oil, sugar and red pepper flakes. Stir together using a spoon. Cover over a high flame for 7 minutes, covered. Continue to cook another 20 minutes over a medium flame. Because pork ribs tends to be fatty, it is good to skim the surface of fat as it cooks. By now the ribs should be well cooked and tender. If not, allow it to cook for a few minutes, covered. Discard the ginger before serving.
