Alsatian Pork Stew

Ingredients:


1/4 pound bacon

1 cup onion

16 ounces sauerkraut

2 tablespoons brown sugar

2 medium new potatoes

2 medium apple

12 pieces juniper berry

6 pieces peppercorns

2 whole clove

1 bunch parsley

1 piece bay leaf

1 piece cheesecloth

4 chops smoked pork chops

4 links beef frankfurter

2 cups chicken stock
 

Preparation / Directions:


combine bacon and onions in a dutch oven, over a medium flame heat and stir for 10-15 minutes, until bacon is crisp remove from heat, drain well stir in sauerkraut and brown sugar-mix well add potatoes and apples combine juniper, peppercorns, cloves, parsely, and bay in cheesecloth secure with string, as for a sachet add sachet, chops, frankfurters, and stock bring to a boil, cover, reduce heat, and simmer for 30 minutes remove and discard sachet serve hot
