Quickie Mushroom Pizzas

Ingredients:


---pizza dough---

3/4 cup warm water

1 tablespoons granulated sugar

1 package active dry yeast

3/4 teaspoon salt

1 1/2 tablespoons olive oil

2 1/2 cups bread flour

2 tablespoons oil

2 tablespoons cornmeal

---sauce---

15 ounces tomato sauce

---toppings---

3 cups mozzarella cheese -- shredded

3 cans mushroom stems and pieces -- drained
 

Preparation / Directions:


Place warm water and sugar in mixing bowl and sprinkle yeast over the water. DO NOT STIR. Allow to stand for 10-12 minutes. When yeast foams, add flour salt and oil. Using dough hooks on electric mixer, mix for 45 seconds on low speed. Increase speed to medium speed and mix for 8-10 minutes. Cut into 2 or 3 equal pieces and form into round balls, then cover with a towel and let rest for 10-15 minutes. On a lightly floured board roll out two or three pizzas (depending on size you need). Place on a baking pan that has been lightly oiled with olive oil and sprinkled with cornmeal. Cover with a towel. Let rest for 15-20 minutes. Spread tomato sauce over crust and then sprinkle with a generous amount of shredded mozzarella cheese. Spread mushrooms around. Place in preheated 450 oven and bake until golden brown and the cheese has melted. (approx 15-20 minutes).
