Cushaw Custard Pie

A cushaw is a large green and white striped crooknecked squash with a very delicate flavor. One cushaw is enough for 3-5 pies, but it freezes well for future use.
 

Ingredients:


1 crust unbaked pie shell 9 inch

3 Cup cooked cushaw

2 large beaten eggs

1/2 can evaporated milk

3/4 Cup sugar

1 tablespoons flour

1/2 teaspoon salt

1 teaspoon vanilla
 

Preparation / Directions:


To prepare cashew, cut in half lengthwise. Peel and remove seeds. Cut into 1" chunks. Place in a large pot with 1/2 cup water. Cook over low heat until tender. Remove lid and continue cooking until any remaining water is evaporated. If water evaporates before cashew is done, add more.

To make the pie:

Preheat oven to 425 degrees. Mix together dry ingredients. Process cooked cashew in blender till smooth. Add other ingredients to cashew and process until well mixed. Pour into pie shell and bake 1 hour or till knife inserted in center comes out clean. One can of sweetened condensed milk can be substituted for the milk and sugar. Serve plain or with whipped cream.
