Golden Lemon Cheese Pie

Ingredients:


1 crust graham cracker pie crust -- 9 inch

8 ounces cream cheese -- softened

14 ounces eagle brand sweetened -- (not condensed milk evaporated milk)

1/3 cup Realemon lemon juice from concentrate

1 teaspoon vanilla extract
 

Preparation / Directions:


In mixer bowl, beat cheese until fluffy. Gradually beat in Eagle Brand until smooth. Stir in ReaLemon brand and vanilla. Pour into prepared crust. Top with Golden Lemon Topping. Chill 3 hours. Garnish as desired. Refrigerate leftovers Golden Lemon Topping: In saucepan, combine 1/3 cup sugar and 2 1/2 teaspoons cornstarch. Add 1/2 cup water, 1/4 cup ReaLemon brand and 1 egg yolk; mix well. Over medium heat, cook and stir until thickened. Remove from heat; stir in 1 tablespoon margarine or butter until melted. Let cool for 1 minute and pour topping over pie.
