Vidalia Onion Pie

Ingredients:


2 crusts pie shells -- baked 9 inch

6 large vidalia onions

4 large eggs -- beaten sliced thinly

1 cup sour cream -- (generous cup)

1/4 cup grated parmesean cheese

1 teaspoon salt and pepper to taste

4 dashes tabasco sauce

1 stick butter

1/4 cup grated cheese for top
 

Preparation / Directions:


Cook onions in butter until clear and soft (about 15 min.), stirring often. Add all other ingredients. Mix and pour into the 2 baked pie shells. Sprinkle grated cheese on top. Bake in 375 deg. oven for 20 minutes, then lower temp. to 350 deg. for an additional 40 minutes until lightly browned on top.
