Pumpkin Whoopie Pies (Gobs) |

Ingredients:
2 cups brown sugar |
1 cup oil |
1 1/2 can cooked -- mashed or canned pumpkin |
2 large eggs |
3 cups flour |
1 teaspoon salt |
1 teaspoon baking powder |
1 teaspoon vanilla |
1 1/2 tablespoons cinnamon |
1/2 tablespoon ginger |
1/2 tablespoon ground cloves |
---filling |
1 large beaten egg white |
2 tablespoons milk |
1 teaspoon vanilla |
2 cup confectioners sugar |
3/4 cup shortening |

Preparation / Directions:
Cream sugar and oil. Add pumpkin and eggs. Add dry ingredients and vanilla. Mix well. Drop by heaping teaspoons onto a greased cookie sheet. Bake at 350 F for 10-12 minutes.
Filling Mix first 4 ingredients well then add rest of sugar and shortening.
Make sandwiches out of two cookies with filling.
