Pineapple-Rhubarb Pie

Ingredients:


3 cups rhubarb -- cut thin

1 cup crushed pineapple

1 cup sugar

2 tablespoons flour

1/4 teaspoon salt
 

Preparation / Directions:


Mix above stirring well. Two egg yolks beaten and added to 1/2 cup milk. Pour this over fruit mixture.. Place in 9 inch pastry lined pan and sprinkle with nutmeg. Bake at 350 degrees for 30 minutes. Remove from oven and cool slightly-then top with meringue made from 2 egg whites and 3 tablespoons of sugar, 1/4 teaspoon cream of tartar. Return to 325 degree oven for 10 minutes or until light brown and ENJOY!!!
