Old-Fashioned Lemon Pie

Ingredients:


1 cup sugar

5 Tablespoon cornstarch

1/4 Teaspoon salt

1 1/2 Cup water

1/3 pieces margarine or butter

1/3 Cup lemon juice

2 Teaspoon grated lemon rind

3 Large eggs

6 Teaspoon sugar
 

Preparation / Directions:


Mix dry ingredients. Add all other ingredients, except eggs, and mix thoroughly. Stir over low heat (do not use double boiler) until it begins to thicken; then remove from fire and beat until smooth. Return to heat, cook and stir until it clears about 1 minute of boiling....stir constantly. Add 3 beaten egg yolks, remove from fire and beat until yolks are well blended with custart mixture. Set in pan of cold water to cool slightly. Pour into bakes pie shell. Beat 3 egg whites until peaks form. Add 6 teaspoons of sugar and beat until glossy. Cover entire surface of prepared pie, being sure to seat egg whites to edge of shell. Brown at 425 degree oven until light brown.
