Mango-Cranberry Cobbler

Ingredients:


4 cups cranberries

1 1/3 cup sugar

2 Tablespoons orange zest

2 Tablespoons butter -- unsalted

2 Tablespoons canola oil

1 large egg -- lightly beaten

1 1/2 cups all-purpose white flour

1 Tablespoon baking powder

3/4 cup buttermilk

3 medium mangoes -- ripe. peeled,
 

Preparation / Directions:


Preheat oven to 350ยบ. Lightly oil an 8 x 12-inch or 7 x 11-inch baking pan or use nonstick spray. Set aside. In a food [processor, pulse cranberries until coarsely chopped. Place in a large mixing bowl with 1 cup sugar and orange zest. Stir to combine. Let stand for 15 minutes, stirring occasionally. In a mixing bowl, beat butter, oil and the remaining 1/3 cup sugar with an electric mixer until light and fluffy. Add egg and mix well. Sift flour and baking powder together and add to the butter mixture alternately with buttermilk. Spread mangoes and the reserved cranberry mixture evenly in the prepared baking pan. Spoon the cobbler dough over the fruit, covering it completely. Bake for 40-50 minutes or until the topping is browned and the fruit mixture is bubbling. Remove from the oven and let stand for 5-10 minutes before serving.
