Farley's Special Apple Pie

Ingredients:


4 medium granny smith apple -- peeled and sliced

4 medium empire apples -- peeled and sliced

1/3 cup brown sugar

1/3 cup sugar

3 tablespoons cry -- minced

2 tablespoons bourbon

1/2 teaspoon cinnamon

1/4 teaspoon allspice

1/4 teaspoon mace

1 large egg

1 teaspoon water

1 teaspoon sugar -- for topping
 

Preparation / Directions:


In a large bowl, fold together the apples, sugars, ginger, bourbon, cinnamon, allspice and mace. Set aside. Preheat oven to 350F. Place crust in bottom of a 9" pie pan. Brush the rim with some of the egg wash. Spoon filling into shell, it will be very full. Put the other crust on top. Cut off excess, turn the edges and crimp. Poke holes into crust. Brush with the rest of the egg wash and top with the sugar. Place the pie into the oven and turn oven to 450F. for 15 minutes. Reduce heat to 375F. and bake for approximately 45 minutes or until the crust is a deep golden brown and the filling is bubbly. Serve with ice cream, whipped cream or cheese.
