Cranberry Pecan Pie

Ingredients:


---CRUST:

1 crust pie pastry (bought or home made) 9 inch

---FILLING:

3/4 cup firmly packed brown sugar

3/4 cup dark corn syrup

1/4 cup butter melted

3 large eggs

1/8 teaspoon salt

1 cup dried cranberries

1 cup pecan halves
 

Preparation / Directions:


Heat oven to 350 F. Prepare crust for pie as directed. Set aside. In large mixer bowl combine brown sugar, corn syrup, butter, eggs and salt. Beat until well mixed (1 to 2 minutes). By hand, stir in cranberries and pecans. Pour filling into pie shell. Bake for 50 to 55 minutes or until filling is set. If crust is browning too quickly, cover edges of crust with 2 inch strip of aluminum foil. Serve with sugared cranberries if desired. Prep Time: 1 hour 10 minutes
