Blueberry Blackberry Cobbler

Ingredients:


1 cup all-purpose flour

3/4 cup sugar

1 teaspoon baking powder

1/4 teaspoon salt

1/4 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

2 large eggs slightly beaten

2 tablespoons cooking oil

2 tablespoons milk

1 1/2 cups ffresh or frozen blueberries

1 1/2 cups fresh or frozen blackberries

3/4 cup sugar

1/2 cup water

1 teaspoon ginely shredded orange peel

1 pint half-and-half -- light cream, whipped cream

1 pint OR ice cream -- (optional)
 

Preparation / Directions:


1. In medium mixing bowl stir together flour, 3/4 cup sugar, baking powder, salt, cinnamon and nutmeg. Combine eggs, oil and milk; add to dry ingredients. Stir just until moistened. Spread batter evenly in the bottom of 4-quart cooker. 2. In medium saucepan combine blueberries and blackberries 3/4 cup sugar water and orange peel; bring to a boil. pour hot fruit over batter. 3. Cover; cook on HIGH-heat setting for 2 to 2-1/2 hours or till a toothpick inserted into center of cake comes out clean. Let stand 30 minutes to cool slightly before serving. 4. To serve, spoon the warm cobbler into bowls. Serve with cream or ice cream, if desired. Makes 6 servings.
