Banana Cream Pie

Ingredients:


1/4 cup butter -- softened

2 tablespoons iced water

1 cup flour

2 large sliced bananas -- (3-small)

2 tablespoons butter -- melted

2 cups milk

1/4 cup cornstarch plus

1 tablespoon cornstarch

3/4 cup sugar

3 large egg yolks

1 teaspoon vanilla
 

Preparation / Directions:


Preheat oven to 350 F. Mix together butter, water, and flour. Press into pie tin and bake at 350 F. until light brown. Cool. In top of double boiler, cream together sugar, cornstarch, and melted butter. Add milk and cook over low flame until custard begins to thicken. Do not let thicken too much. Add egg yolks and vanilla. Place sliced bananas into baked crust and pour in cool custard. Use whipped cream for topping, if desired.
