Pear-and-Cranberry Streusel

Ingredients:


1 cup dry red wine

1 cup water

1 cup firmly packed brown sugar

1 1/2 cups dried cranberries

5 Medium ripe pears -- peeled and cored into 1/2 inch thick wedges about 2 1/2 pounds

1 spray nonstick cooking spray

1/2 cup all-purpose flour

1 teaspoon ground cinnamon

4 tablespoons chilled stick margarine -- cut in small pieces
 

Preparation / Directions:


1) Preheat oven to 350 oF. 2) Combine red wine, water, and 1/2 cup brown sugar in a large saucepan; bring to a simmer. Stir in dried cranberries, and cook 5 minutes. Remove from heat, and stir in pear wedges. Spoon into a 13 x 9 inch baking dish coated with cooking spray; set aside. 3) Combine remaining 1/2 cup brown sugar, flour, and cinnamon in a bowl; cut in margarine with a pastry blender or 2 knives until the mixture resembles coarse meal. Sprinkle over pear mixture, and bake at 350 oF for 30 minutes or until bubbly.
