Mrs. M's Spinach And Noodles

Ingredients:

8 ounces egg noodles
4 large eggs -- separated
1/4 cup scallions chopped
1 1/2 cups cooked chopped spinach
1 teaspoon salt
 

Preparation / Directions:

Cook noodles in boiling, salted water following package directions; drain Preheat oven to 350 degrees. Beat egg yolks. Combine with scallions, spinach, noodles, and salt. Beat egg whites until stiff; fold into noodle mixture. Pour into buttered, 1 1/2 quart baking dish and bake for 30 minutes. Remove from oven, and serve.
