Penne With Vodka-Tomato Sauce

Ingredients:


12 ounces penne pasta or other tubular pasta

2 tablespoons pure olive oil

1 small onion -- chopped

2 cloves garlic minced

2 teaspoons dried oregano

1/2 cup vodka

1 can crushed tomatoes with added puree -- (16-ounces)

1/2 cup whipping cream

1/2 cup grated parmesan cheese
 

Preparation / Directions:


Cook pasta in large pot of boiling salted water until tender, but still firm to bite. Meanwhile, heat oil in heavy large saucepan over medium-high heat. Add onion, garlic and oregano and saute until onion is tender, about 5 minutes. Add vodka. Boil until most of liquid evaporates. Add tomatoes and cream and simmer until slightly thickened, about 10 minutes. Add cheese and stir to melt. Season to taste with salt and pepper. Drain pasta. Transfer to large bowl. Add sauce and toss to coat. Prep Time: 10 minutes Cook Time: 20 minutes Makes: 4 servings Pasta lends itself to so many sauces. This is one of my favorites. The combination of tomatoes, cheese and cream with a hint of vodka is terrific.
