Ricotta and Vegetable Pasta

Ingredients:


1 pound angel hair Pasta

2 medium Carrots scrubbed and into matchstick size

2 medium Crookneck squash cut matchstick size

4 bunches Scallions chopped

2 tablespoons Olive oil

2 bunches Leeks cleaned and sliced

2 tablespoons Calverts cedar street -- Garlic mustard

8 ounces Ricotta cheese

3/4 cup Half-and-half

1 cup freshly grated parmesan divided
 

Preparation / Directions:


Ricotta and vegetable matchstick pasta. Heat olive oil and saute carrots over medium heat for 5 minutes. Add squash and scallions and saute for 3 more minutes. Cook pasta until al dente. Drain and return to pot. Toss with ricotta cheese, half-and-half mustard and sauteed vegetables. Heat quickly to warm. Serve topped with freshly grated Parmesan.
