MACARONI AND CHEESE

Ingredients:


7 ounces uncooked elbow -- Rotini or ziti

2 tablespoons Margarine or butter

1 small Onion -- chopped

2 tablespoons All-purpose flour

1/2 teaspoon Salt

1/4 teaspoon Pepper

2 cups Milk

8 Ounces sharp processed Cheese loaf process cheese Spread into 1/2-inch Cubes or shredded cheddar
 

Preparation / Directions:


Heat oven to 375 degrees. Cook macaroni as directed on package. Heat margarine in 3-quart saucepan over medium heat. Cook onion in margarine about 3 minutes. Stir in flour, salt and pepper. Cook, stirring constantly, until mixture is bubbly; remove from heat. Stir in milk. Heat t stirring constantly. Boil and stir 1 minute; remove from heat. Stir in cheese until melted. Add macaroni and stir until coated. Pour into ungreased 1-1/2-quart casserole. Bake about 30 minutes or until bubbly and light brown. To Microwave: Mix macaroni, 2 cups hot water, the margarine, onion, salt and pepper in 2-quart microwavable casserole. Cover tightly and microwave on high 5 minutes; stir. Cover tightly and microwave on medium (50%) 4 to 6 minutes or until boiling. Reduce milk to 1-1/4 cups. Stir in remaining ingredients. Cover tightly and microwave on high 5 to 8 minutes, stirring every 3 minutes, until mixture is bubbly and macaroni is tender. Let stand covered 5 minutes before serving.
