Spicy Rigatoni and Broccoli

Ingredients:


4 ounces weet loose sausage

10 ounces marinara sauce

1/4 medium spanish onion -- diced

1/4 teaspoon red pepper seed

1 ounce butter

4 tablespoons olive oil

4 ounces dry rigatoni -- or ziti

2 fillets anchovies in oil chopped

4 cloves garlic chopped

2 ounces marsala wine

1 head broccoli flowerets only
 

Preparation / Directions:


Blanch off broccoli in boiling salted water, keeping it crisp. Rinse of in cold water, drain and set aside. Cook pasta in boiling salted water until al dente. Rinse in cold water, drain and add a few drops of salad oil to keep from sticking. Set aside. Start by cooking sausage halfway on medium heat and draining oil. Add onions, garlic, anchovies and red pepper seed. Cook until sausage is fully cooked. Turn heat up to high and add broccoli and pasta for 1-2 minutes. Deglase with wine and reduce until almost dry (1-2 minutes). Add marinara sauce and cook for 1-2 minutes. Take away from heat and add butter to form smooth sauce. Asiago or Parmesan cheese may be added to top of this spicy dish.
